Chop Suey Chow Mein

This is an easy-to-make, healthy and delicious meal. Simply put, chop suey is a dish containing minced meat and a variety of vegetables, flavoured with some stock and seasoning. It is usually eaten over rice. It's been around forever and is an old family-favourite of ours. The best part is, you can add or subtract any vegetables, depending on your likes and dislikes.

500 g beef mince
1 carrot chopped
3 celery stalk finely chopped
1/4 cabbage shredded
1 handful of bean shoots
2 onion sliced
3 tbs rice
1 tsp curry powder
45 g chicken noodle instant soup
1 tbs oil
1 pinch salt and pepper *to taste
Heat the oil in a pan and brown mince, celery, and onion.
Make up the chicken noodle soup according to packet directions in a large saucepan.
Add the mince mixture, rice, curry, pepper and salt into the soup.
Simmer for 10 minutes, stirring occasionally to avoid catching on pan.
Add carrot and cabbage and simmer for a further 8 minutes, or until carrot and cabbage are cooked.
