Cauliflower Fried Rice

Fried rice is delicious, but sometimes you just want to cut down on the grains and amp up on the vegetable intake. Cauliflower Fried Rice is the best of both worlds and honestly - it absolutely tastes like fried rice!

Ingredients

1 medium-sized head of cauliflower

2 tablespoons coconut oil

1 large carrot, cubed

1 cup of broccoli

1/2 cup green beans (chopped)

1/2 cup corn corn kernels

1 celery stalk

2 garlic cloves, minced

2 beaten eggs

3 tablespoons soy sauce

spring onions

Directions

PREP CAULIFLOWER:

Shred cauliflower using the largest side of a grater OR by just pulsing some rough cut pieces in a food processor; the end product should resemble smallish grains of rice.

STIR FRY:

Heat 1 tablespoon coconut oil in a large wok over medium low heat. Add the carrots, broccoli, celery and garlic and stir fry until fragrant, about 5 minutes. Add the cauliflower, beans, corn kernels, and remaining coconut oil to the pan; stir fry quickly to cook the cauliflower to a soft (but not mushy) texture.

FINISHING TOUCHES:

Make a well/hole in the middle, turn the heat down, and add the eggs. Stir gently and continuously until the eggs are fully cooked. Stir in the soy sauce and spring onions just before serving.

NOTE: This recipe tastes best the same day.  The cauliflower can get overly 'cauliflower-smelling' when you have it as leftovers.
